S’mores Cookie Pie by Jenn Cafferty
8 oz. cream cheese, room temperature
4 oz. white chocolate, melted
1 package Goodie Girl S’mores Sandwich Cookies, chopped
4 cups of marshmallows
Heat oven to 350 F.
Melt the chocolate in a double boiler or in the microwave. If using the microwave, start with 1 minute and stir, then continue with 30 second intervals, stirring in between, until melted.
In a medium bowl, combine cream cheese and chocolate.
Once combined, stir in cookies.
Pour mixture into a greased 9” pie plate.
Top the mixture with the marshmallows
Bake for 15 minutes or until the top is lightly browned.
Remove from the oven and turn on the broiler.
Once the broiler is heated, place the pan back in the oven, about 4” from the broiler (so the marshmallows don’t burn). Broil for 1-2 minutes or until the marshmallows are a light golden brown. Watch the marshmallows carefully so they do not burn. You can also use a brulee torch to brown the marshmallows.
Allow to cool for 5 minutes before serving.
If serving the pie after it has fully cooled, heat the pie in the microwave for 1 minute to soften the marshmallows.
Tip: spray a knife with cooking spray before cutting so that the marshmallows don’t stick to the knife.
