Apple cinnamon gluten free mug cake is the perfectly sized individual gluten free coffee cake. Full of apple, cinnamon and a gluten free oatmeal cookie streusel.

Oatmeal cookies are a favorite around here. Well, really all cookies, but I love oatmeal ones because they kinda feel like I’m sneaking in a little something healthy. They do have oatmeal of course!

Anytime I can sneak in cookies for breakfast (like with these Oatmeal Cookie Overnight Oats) it’s a win. This individual apple cinnamon gluten free mug cake is perfection. It only takes a couple minutes to whip up, a few in the microwave, and bam- the perfect little gluten free coffee cake.

  • 1/4 cup gluten free flour
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon cinnamon
  • 2 Tablespoons sugar
  • 1 egg
  • 1 Tablespoon melted butter (let cook before mixing)
  • 2 Tablespoons milk
  • 2 Tablespoons finely chopped apple
  • 1 teaspoon brown sugar
  • 1 Tablespoon melted butter
  • 3 small gluten free oatmeal cookies, crushed
  1. Mix together cake dry ingredients.
  2. Separately mix together cake wet ingredients,
  3. Combine and mix until no lumps.
  4. Fold in chopped apple.
  5. Combine all streusel ingredients.
  6. Reserve one Tablespoon streusel for topping.
  7. Fold remaining streusel into batter.
  8. Pour into greased mug.
  9. Top with reserved streusel.
  10. Microwave for 3 minutes.
