Goodie Girl Cookies™
Apple Cinnamon Gluten Free Mug
(Gluten-Free)

Cake
  • 1/4 cup gluten free flour
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon cinnamon
  • 2 Tablespoons sugar
  • 1 egg
  • 1 Tablespoon melted butter (let cook before mixing)
  • 2 Tablespoons milk
  • 2 Tablespoons finely chopped apple
  

Streusel
  • 1 teaspoon brown sugar
  • 1 Tablespoon melted butter
  • 3 small gluten free oatmeal cookies, crushed
  • Mix together cake dry ingredients.
  • Separately mix together cake wet ingredients,
  • Combine and mix until no lumps.
  • Fold in chopped apple.
  • Combine all streusel ingredients.
  • Reserve one Tablespoon streusel for topping.
  • Fold remaining streusel into batter.
  • Pour into greased mug.
  • Top with reserved streusel.
  • Microwave for 3 minutes.

These are so easy to make, you are going to wonder why you never thought to do this before!

I N G R E D I E N T S

  • 4 cups marshmallows
  • 3 Tablespoons butter
  • 6 cups popped popcorn (one bag microwaved)
  • 1/2-3/4 cups chopped gluten free cookies (I used Goodie Girl fudge striped)

P R E P A R A T I O N

  • Melt butter and marshmallows over medium heat.
  • Pour over popcorn, toss to combine.
  • Add chopped cookies.
  • Toss to combine.
  • Let cool slightly.
  • Using greased hands, shape into balls.
  • Wrap in plastic wrap to store.

  • Prepare baking sheet with parchment paper • Melt white chocolate • Cut (refrigerated) cookies into small pieces with kitchen shears • Mix favorite toppings like seeds, nuts, dried fruit • Pour melted chocolate onto paper and spread about ¼ inch thick • Sprinkle crushed cookies • Sprinkle mixed toppings • Dust with sea salt • Refrigerate for one hour

Goodie Girl was a snack for the stars at the 2016 Critics’ Choice Awards. Chef Jerry Baker of The Food Matters created some cool new recipes that were hits among the stars. One snack of the tasty snacks was Goodie Girl Gluten Free S’mores! A new gluten free twist on an old favorite!

I N G R E D I E N T S
1 6oz package of Goodie Girl Gluten Free Quinoa Chocolate Chunk Cookies 1 cup of chocolate ganache 1 package of large marshmallows

P R E P A R A T I O N
1) Spread ganache over desired amount of cookies.
2) Place marshmallow on top of ganache. Use a kitchen torch to toast marshmallow on a clean metal pan. Top with another cookie if desired to create a marshmallow sandwich.
3) Serve immediately.

Tiramisu Chocolate Truffles

I miss Tiramisu. I love the strong flavor of the espresso and the creaminess of the mascarpone cheese. These gluten free chocolate truffles have all the flavors of Tiramisu, but are really easy to make! Plus, they are perfect for any holiday parties you may have coming up!

I N G R E D I E N T S
1 Box Goodie Girl Vanilla Slims Cookies
8 ounces mascarpone cheese
3 teaspoons instant espresso powder
2 tablespoons sugar
8 ounces dark chocolate chips (or baking bar)

P R E P A R A T I O N
Combine Vanilla Slims Cookies and espresso powder in food processor. Pulse until cookies turn to crumbs. Beat mascarpone cheese with sugar. Stir in cookie mixture. Make small balls (about one inch) with cookie mixture. If it is not wanting to hold together, chill for half an hour first. Chill cookie balls for at least an hour. Melt chocolate in microwave in 30 second increments. Be careful not to burn. Carefully dip cookie balls into chocolate. Place on wax paper and chill until ready to serve. Store leftovers in fridge.

Inside Out Apple Crisp

A twist on the traditional gluten free apple crisp. Honey crisp apples stuffed with a gluten free oatmeal cookies and dripping with caramel.

I N G R E D I E N T S
4 Honey Crisp (or other large) apples
8 Tablespoons brown sugar
4 Tablespoon butter
4 Oatmeal Raisin Cookies, crumbled

P R E P A R A T I O N
Core apples. Throw out core. Scoop out inside of apple. Save apple pieces. Melt butter. Combine brown sugar, melted butter, apple pieces and crumbled oatmeal cookies. Stuff into apples. Press down. Some of the butter/sugar mixture will come out. Bake at 350 for 25 to 30 minutes. Move apples to serving platter and pour caramel from dish over them

Surprise your friends & kids with a personal warm and crunchy apple pie. Don’t let their size fool you, these mini pies pack a lot of flavor! Serves: 8

I N G R E D I E N T S
Crust:
2 cups finely crumbed Toffee Chaos Goodie Girl Cookies™ ½ stick butter, melted Filling:
1 (9 inch) gluten-free pie shell
6 cups thinly sliced apples
1 tablespoon lemon juice (optional)
3/4 cup white sugar
2 tablespoons King Arthur all-purpose gluten-free flour
1/2 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
1/2 cup raisins (optional)
1/2 cup chopped walnuts (optional)
Topping:
1 - 6oz Bag Toffee Chaos Goodie Girl Cookies™

P R E P A R A T I O N
Preheat oven to 375 degrees F (190 degrees C).

Crust: In a food processor or by hand, finely crush your cookie crumbs. Place the cookie crumbs in a large bowl. Add the melted butter, and stir until completely incorporated. The mixture will turn more solid, as though if you made it into a clump with your hands, it would mostly stay together with a few crumbs crumbling off. Transfer the mixture to small greased tartlet dishes. Press the mixture evenly into the bottom and up the sides of the pan, using either a rubber spatula or impeccably clean hands. Once the crumbs have been pressed firmly into place, bake the crust in the preheated oven at 350 until warm. Filling: Place sliced apples in a large bowl. Sprinkle with lemon juice if desired. In a small bowl, mix together white sugar, 2 tablespoons flour, cinnamon, and nutmeg. Sprinkle mixture over apples. Toss until apples are evenly coated. Stir in raisins and walnuts if desired. Spoon mixture into pastry shell.

In a small bowl crumble Toffee Chaos Goodie Girl Cookies™. Sprinkle mixture over apple filling. Cover top loosely with aluminum foil.

Bake in preheated oven for 20 minutes. Remove foil and bake an additional 15 to 20 minutes, until top is golden brown. Cool on a wire rack.

Chocolate Chip Mousse Bomb
(Gluten-Free)

People will think you’re super fancy serving them these cute little treats. I mean any dessert with the word “mousse” in it seems fancy to me. But this mousse is so totally not fancy. It’s like, really ridiculously easy. Cookie dough-like taste you remember from your childhood.

I N G R E D I E N T S
1 cup Cool Whip
1 cup Powdered Sugar
4 oz Cream Cheese
2 cups Semi Sweet Chocolate Chips
1 tbsp Vegetable Shortening
25 Chocolate Chip Goodie Girl Cookies™

S U P P L I E S
a small scooper
melted chocolate

P R E P A R A T I O N
Mix some softened cream cheese and powdered sugar in a mixing bowl until it’s smooth, then fold in some Cool Whip. Chop up some chocolate chip cookies and fold them into your fancy mousse. Let this stuff chill in fridge for a bit. Place your cookies on a flat surface. Using the scooper, blob a scoop of the mousse on top, gently pressing so the mousse sticks to the cookie. Make sure you press it down so it sticks to the cookie, this will make a huge difference when you go to dip. dip the mousse into melted chocolate, covering completely. You can sprinkle with mini chocolate chips if you like. Let the chocolate set up in the fridge and then they’re ready to eat!


Goodie Girl Cookies
Rice Crispy Treat Energy Bars
(Gluten-Free)

You and your family are going to love getting creative with these super easy and delicious rice crispy bars. You can basically toss in anything in the pantry and use any of our delicious cookies. My kids freaked when I told them we were going to make a rice crispy treat without marshmallows and then they couldn’t keep their hands, (or mouths!), off of them.

I N G R E D I E N T S
8 Toffee Chaos Goodie Girl Cookies™
1 cup Brown Rice Syrup (or honey)
1 cup Natural Peanut Butter (or any nut butter)
4-6 cups Crispy Rice Cereal
Optional add-ins – chopped nuts, seeds, dried fruit

P R E P A R A T I O N

    Lightly coat a baking pan with your favorite cooking spray. Place brown rice syrup and peanut butter in sauce pan over medium/low heat and stir, bringing to boil. Pour in rice crispies and stir until most of the syrup is incorporated. Dump in Goodie Girl cookies and any other add-ins. Pour into pan and pack with hand until firm. Stick in fridge for about an hour. Cut into squares. Wrap in plastic wrap or sealed container. These will stay good for a long time.


Goodie Girl Cookies™ Easy Mint Chocolate Sandwich Cookies

With St. Patrick's Day coming up this is the perfect time of the year for a minty recipe! And you are really going to love this recipe because it is super quick, easy, and tasty! These sandwich cookies come together easily because I use store bought gluten free mint cookies and a simple, delicious ganache.

I N G R E D I E N T S
Goodie Girl Mint Slims
1/2 Cup Dark Chocolate or White Chocolate Chips
1/4 Cup Heavy Cream

P R E P A R A T I O N
Put the chocolate chips in a small bowl.  Heat the heavy cream until not quite boiling, then pour over chocolate chips. Let sit for a bit, then whisk until melted. Chill. Once chilled, take out the mixture and beat it with a whisk or mixer until fluffy. Put into a piping bag. Take out two cookies at a time, pipe some ganache on one, and sandwich them together. And you're done!

One of my favorite traditions is spending hours in the kitchen baking with my mother. This year, we decided to get creative and make a yummy gluten-free treat!

I N G R E D I E N T S
16 Goodie Girl Cocoa Slims™
¼ cup Organic raw sunflower seeds
¼ Organic raw pumpkin seeds
¼ Traverse City dried cherries
¼ Organic flake unsweetened coconut
16 oz. Ghirardelli White Baking Chocolate
Sea Salt

P R E P A R A T I O N

Melt white chocolate

1. While the chocolate is melting, cut Goodie Girl Cocoa Slims into small pieces – I refrigerated the cookies and then used kitchen shears to cut the cookies into small chunks. (I found that the refrigerated cookies were not as messy to work with – when the chocolate was room temperature is was a yummy, but chocolate mess.)

2. Prepare a jellyroll or a pizza pan with parchment paper. Its important to have a pan with a bit of an edge.

3. Mix the sunflower seeds, pumpkins seeds, coconut, dried cherries and sea salt.

4. When the chocolate has melted, pour it out on the parchment paper and spread it to about one quarter inch thick.

5. Sprinkle the Goodie Girl pieces onto the melted chocolate. Next sprinkle the seed, nut and fruit mixture onto the chocolate. Dust with a bit of sea salt and refrigerate for one hour.

6. Break into pieces and enjoy.… Just the right amount of wrong!


Goodie Girl Cookies
Cream Pudding Pops
(Gluten-Free)

Does anyone remember pudding pops! They were a total phenomenon and awesome and then they were just gone. This is a great healthy alternative to ice cream. You can make as simple or decadent as your little heart desires and switch up the flavor by simply using a different cookie!
Prep Time: 2 minutes, freezing 3-5 hours.

I N G R E D I E N T S
8 Goodie Girl Cookies™ of our choice. I used Midnight Brownie because they’re really similar to Oreos or the chocolate crunchies inside an ice cream cake. Mint Slims would make a slamming minty pop.
1 box Instant pudding flavor of choice
2 cups Milk (or any nut milks)
Add-ins: sliced berries, bananas

P R E P A R A T I O N

    Rummage through your cabinets to find your popsicle molds. The mix will make about 8 standard size pops. You can save the extra filling in fridge if you only have 1 mold or get creative using ice cube trays. Toss ingredients in blender or any processor. Pulse till cookies are desired consistency. You can make as chunky or smooth as you like. Pour into molds and freeze It’s fun to pour some and then throw in some fruit for added color. Have a blast. Run molds under warm water to release. Yum

Midnight S’mores

This version of the childhood campfire favorite is for ALL ages -- roasted marshmallow between Midnight Brownie Goodie Girl Cookies™ and salty almond butter. Prep Time: 5 minutes

I N G R E D I E N T S
1 tablespoon almond butter (preferably at room temperature, for easy spreading)
2 Midnight Brownie Goodie Girl Cookies™
1 campfire toasted marshmallow

P R E P A R A T I O N
Spread almond butter onto one of the cookies. Slide marshmallow off skewer onto almond butter. Top with remaining cookie and squish down gently. Devour & lick fingers… Just the right amount of wrong!

Midnight Brownie Banana Popsicle
(Gluten-Free)

Time for a cool summer recipe using Midnight Brownie Goodie Girl Cookies™. A healthy snack for your kids with "Just the Right Amount of Wrong". Prep Time: 10 minutes

I N G R E D I E N T S
2 ripe bananas
12 strawberries
1 cup of almond milk
6 tb water
2 crushed Midnight Brownie Goodie Girl Cookies™

S U P P L I E S
6 popsicle molds
6 wooden popsicle sticks
Blender or NutriBullet

P R E P A R A T I O N
Blend bananas and almond milk in the blender. Pour the banana liquid in the popsicle mold to fill 2/3 of container. Freeze 1 hour. Blend strawberries and water. Pour the strawberry liquid to fill popsicle mold to top. Put popsicle sticks in place and freeze for 2 hours. Pull frozen pops out of molds. Wet the top and press into Midnight Brownie Goodie Girl Cookies™ crumbs. Hand to the kids and let the party begin… Rock On!


Goodie Girl Cookies
Fried Apple Oatmeal Raisin Parfait
(Gluten-Free)

I N G R E D I E N T S
2 apples
¼ squeezed lemon juice br> 2 tablespoons of sugar
2 tablespoons unsalted butter
1/2 cup yogurt
sprinkle of cinnamon
1 Oatmeal Raisin Goodie Girl Cookie™

P R E P A R A T I O N
Peel 2 apples and remove core. Cut in thin slices.
Place in mixing bowl with ¼ squeezed lemon juice and 2 tablespoons of sugar. Stir and let macerate for 5 minutes.
Place 2 tablespoons unsalted butter in frying pan. When butter is sizzling, place apples side down on top of melted butter. Reserve any liquid in bowl. (Be sure not to crowd the pan or the apples will stew instead of fry.)
Sprinkle pan with cinnamon to taste. I also add a dash of pumpkin pie spice, allspice or nutmeg.
Flip apples and continue cooking until golden brown and a little crunchy, adding a few more sprinkles of sugar if desired. Pour in any liquid from apple bowl.

A S S E M B L Y
Place 1 Goodie Girl oatmeal Raisin Cookies in bottom of glass. Spoon some apples and then top with your favorite yogurt. Add another cookie, apples and yogurt. Top with apples and cinnamon!
